- 1 cup buckwheat groats
- 2 cups water
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 carrot, chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 8 large cabbage leaves
Instructions:
1. In a medium saucepan, bring the water and salt to a boil. Add the buckwheat groats and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the water is absorbed and the buckwheat is tender.
2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, or until the onion is translucent.
3. Add the red bell pepper, zucchini, and carrot to the skillet and sauté for 5-7 minutes, or until the vegetables are tender.
4. Add the thyme, oregano, paprika, salt, and pepper to the skillet and stir to combine.
5. Add the cooked buckwheat to the skillet and stir to combine with the vegetables.
6. Preheat the oven to 375°F.
7. To assemble the rolls, place a cabbage leaf on a cutting board and spoon some of the buckwheat and vegetable mixture onto the center of the leaf. Roll the leaf around the filling, tucking in the sides as you go. Repeat with the remaining cabbage leaves and filling.
