- 1 pound of boneless, skinless chicken breasts, cooked and shredded
- 1 cup of cooked rice
- 1 can of diced tomatoes with green chilies
- 1 can of enchilada sauce
- 1 cup of shredded cheddar cheese
- 1/2 cup of chopped onion
- 1/2 cup of chopped green bell pepper
- 1/2 cup of chopped red bell pepper
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 8-10 flour tortillas
To start, preheat your oven to 350 degrees F. In a large bowl, mix together the shredded chicken, cooked rice, diced tomatoes with green chilies, onion, green and red bell peppers, chili powder, cumin, garlic powder, salt, and pepper.
Next, pour half of the enchilada sauce into the bottom of a 9x13 inch baking dish. Take a flour tortilla and spoon some of the chicken and rice mixture onto it. Roll the tortilla up and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
Once all of the tortillas are in the baking dish, pour the remaining enchilada sauce over the top. Sprinkle the shredded cheddar cheese over the enchiladas.
Bake the enchiladas in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy!
