- 1 tsp chili powder
- 1/2 tsp smoked paprika

- 8 whole wheat tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges


Instructions:

1. In a large bowl, combine the cooked quinoa, black beans, red bell pepper, jalapeno pepper, red onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Mix well.
2. Heat a large skillet over medium-high heat. Place a tortilla in the skillet and sprinkle with 1/4 cup of shredded cheese. Spoon 1/4 cup of the quinoa and black bean mixture over the cheese. Top with another 1/4 cup of shredded cheese and another tortilla.
3. Cook the quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortilla is crispy. Repeat with the remaining tortillas and filling.
4. Cut the quesadillas into wedges and serve with chopped cilantro and lime wedges.
