Lamb Biryani

To start, rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes. In a large pot, heat some oil and add the cumin seeds. Once they start to sizzle, add the sliced onions and sauté until they turn golden brown. Add the ginger-garlic paste and sauté for a minute. Add the chopped tomatoes and cook until they turn soft and mushy.
Add the lamb pieces to the pot and cook until they are browned on all sides. Add the coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes. Add the yogurt and mix well. Cover the pot and let the lamb cook on low heat for 20-25 minutes.
In a separate pot, boil water and add the soaked rice. Cook the rice until it is 80% done. Drain the water and keep the rice aside.
In a large pot, layer the lamb mixture and rice. Start with a layer of rice, followed by a layer of lamb, and then another layer of rice. Repeat until all the rice and lamb mixture is used up. Sprinkle chopped cilantro on top.
Cover the pot with a tight-fitting lid and cook on low heat for 10-15 minutes. Once done, fluff the rice with a fork and serve hot.
