- 4 large bell peppers

5. Add the cooked rice, diced tomatoes, paprika, cumin, chili powder, salt, and pepper to the skillet. Stir to combine.
6. Stuff the bell peppers with the jambalaya mixture and place them in a baking dish.
7. Cover the dish with foil and bake for 30 minutes.
8. Remove the foil and sprinkle shredded cheddar cheese over the top of each pepper.
9. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
