Jambalaya-Stuffed Eggplant

- 1 medium-sized eggplant

- 1/4 cup cooked andouille sausage, diced
- 1/4 cup cooked shrimp, diced

To start, preheat your oven to 375°F. Cut the eggplant in half lengthwise and scoop out the flesh, leaving about 1/4 inch of flesh around the edges.
