For the falafel mixture:

- 1 cup of dried chickpeas, soaked overnight
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1/2 cup of fresh parsley, chopped
- 1/2 cup of fresh cilantro, chopped
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of baking powder
- Salt and pepper to taste

For the tomato sauce:

- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 can of diced tomatoes
- 1 teaspoon of dried oregano
- Salt and pepper to taste
For the stuffed onions:

- 4 large onions
- 2 tablespoons of olive oil
- Salt and pepper to taste
To start, preheat your oven to 375°F. Begin by making the falafel mixture. Drain the soaked chickpeas and add them to a food processor along with the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is well combined but still slightly chunky.
Next, make the tomato sauce. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes. Add the diced tomatoes, oregano, salt, and pepper and simmer for 10 minutes.
To prepare the onions, cut off the tops and bottoms and peel away the outer layers. Use a spoon to scoop out the center of each onion, leaving a shell about 1/2 inch thick. Reserve the scooped-out onion for another use.
Brush the inside of each onion shell with olive oil and sprinkle with salt and pepper. Fill each onion with the falafel mixture, packing it in tightly. Place the stuffed onions in the tomato sauce and spoon some of the sauce over the top.
Cover the skillet with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the onions are tender and the falafel is cooked through.
The Falafel-stuffed onions with tomato sauce is a perfect combination of savory and sweet flavors. The onions are soft and tender, while the falafel is crispy and flavorful. The tomato sauce adds a rich and tangy flavor that ties everything together. This dish is perfect for a family dinner or a special occasion.
