Eggplant Parmesan

To start, slice the eggplant into 1/4 inch thick rounds. Season the eggplant slices with salt and let them sit for 30 minutes to remove excess moisture. After 30 minutes, rinse the eggplant slices and pat them dry with a paper towel.
Next, set up a breading station by placing the flour, beaten egg, and breadcrumbs in separate bowls. Dip each eggplant slice in the flour, then the egg, and finally the breadcrumbs. Make sure to coat each slice evenly.
Heat a large skillet over medium-high heat and add enough olive oil to cover the bottom of the pan. Fry the eggplant slices until they are golden brown on both sides. Place the fried eggplant slices on a paper towel to remove excess oil.
Preheat the oven to 375°F. In a baking dish, spread a layer of tomato sauce on the bottom. Add a layer of fried eggplant slices on top of the tomato sauce. Sprinkle grated Parmesan cheese and shredded mozzarella cheese on top of the eggplant slices. Repeat the layers until all the ingredients are used up.
