Chickpea and corn fritters
Chickpea and corn fritters are a delicious and healthy dish that can be enjoyed as a snack or a main course. These fritters are made with a combination of chickpeas, corn, and a variety of spices, making them a flavorful and satisfying meal.
To make these fritters, you will need the following ingredients:
- 1 can of chickpeas, drained and rinsed
- 1 cup of corn kernels
- 1/2 cup of flour
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped green onions
- 1 egg
- 1/4 cup of milk
- 2 tablespoons of olive oil
To start, combine the chickpeas and corn in a large bowl and mash them together with a fork or potato masher. Add the flour, baking powder, cumin, paprika, salt, black pepper, cilantro, and green onions, and mix well.
In a separate bowl, whisk together the egg and milk, and then add it to the chickpea and corn mixture. Stir until everything is well combined.
Heat the olive oil in a large skillet over medium-high heat. Using a spoon or cookie scoop, drop the batter into the skillet and flatten it slightly with the back of the spoon. Cook for 2-3 minutes on each side, or until golden brown and crispy.
Serve the fritters hot, garnished with additional cilantro and green onions if desired. These fritters are crispy on the outside and soft on the inside, with a delicious blend of spices and flavors. They make a great appetizer or main course, and are perfect for vegetarians and meat-lovers alike.
