- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon olive oil

Instructions:

1. Preheat the oven to 375°F.
2. In a large skillet, heat the olive oil over medium heat. Add the onion, celery, and carrot and cook until softened, about 5 minutes.
3. Add the ground turkey to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks.
4. Add the cooked brown rice, garlic powder, thyme, salt, and black pepper to the skillet and stir to combine.
5. Remove the skillet from the heat and let cool slightly.
6. In a separate bowl, mix together the diced tomatoes and chicken broth.
7. To assemble the cabbage rolls, place a cabbage leaf on a cutting board and spoon about 1/4 cup of the turkey and rice mixture onto the center of the leaf.
8. Roll the cabbage leaf around the filling, tucking in the sides as you go.
9. Place the cabbage roll seam-side down in a baking dish.
10. Repeat with the remaining cabbage leaves and filling.
11. Pour the tomato and broth mixture over the cabbage rolls.
12. Cover the baking dish with foil and bake for 45-50 minutes, or until the cabbage is tender and the filling is cooked through.
