Ingredients:
- 4 medium-sized sweet potatoes

- 1 teaspoon of chili powder
- Salt and pepper to taste

- 1 cup of fresh cilantro leaves
- 1/2 cup of Greek yogurt
- 1/4 cup of lime juice
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F. Wash the sweet potatoes and prick them with a fork. Place them on a baking sheet and bake for 45-50 minutes or until they are tender.
2. While the sweet potatoes are baking, prepare the black bean filling. Heat the olive oil in a pan over medium heat. Add the onion, red bell pepper, jalapeno pepper, and garlic. Cook for 5-7 minutes or until the vegetables are soft.

5. Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise and scoop out some of the flesh to make room for the black bean filling.
6. Spoon the black bean filling into the sweet potato halves. Drizzle the green sauce over the top and serve.
