Ingredients (serves 4):

- 2 lbs beef short ribs

- 1 tbsp tomato paste
- 6 cups beef broth

To start, season the beef short ribs with salt and pepper. In a large pot, heat some oil over medium-high heat and brown the short ribs on all sides. Remove the short ribs from the pot and set them aside.
In the same pot, add the onion, garlic, carrots, and celery. Cook for a few minutes until the vegetables are softened. Add the tomato paste and cook for another minute.
Return the short ribs to the pot and add the beef broth and bay leaf. Bring the soup to a boil, then reduce the heat to low and let it simmer for 2-3 hours, or until the meat is tender and falling off the bone.
Once the soup is done, remove the short ribs from the pot and shred the meat. Discard the bones and return the meat to the pot. Season the soup with salt and pepper to taste.
