Apple and Cheddar Soup
Apple and Cheddar Soup is a delicious and hearty soup that is perfect for any occasion. This soup is made with fresh apples, sharp cheddar cheese, and a variety of other ingredients that come together to create a rich and flavorful dish.
To make this soup, you will need the following ingredients per serving:
- 1 apple, peeled and chopped
- 1/2 onion, chopped
- 1 garlic clove, minced
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup chicken broth
- 1/2 cup milk
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
To start, melt the butter in a large pot over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent. Add the chopped apple and continue to sauté for another 5 minutes. Sprinkle the flour over the mixture and stir until the flour is fully incorporated.
Slowly pour in the chicken broth and milk, stirring constantly to prevent lumps from forming. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes, or until the apples are tender.
Remove the pot from the heat and use an immersion blender to puree the soup until it is smooth. If you don't have an immersion blender, you can transfer the soup to a blender and puree it in batches.
Return the soup to the pot and stir in the shredded cheddar cheese until it is fully melted and incorporated. Season with salt and pepper to taste.
The Apple and Cheddar Soup is a creamy and savory dish that is perfect for a cozy night in or as a starter for a dinner party. The soup has a smooth and velvety texture, with a subtle sweetness from the apples and a sharp tang from the cheddar cheese.
