- 1 pound ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 package (1 ounce) taco seasoning mix
- 1/2 cup water
- 1 bag (10 ounces) tortilla chips
- 2 cups shredded cheddar cheese
- Sour cream, chopped fresh cilantro, and sliced jalapenos for garnish (optional)


Instructions:

1. Preheat oven to 350°F.
2. In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
3. Add onion and bell peppers to the skillet and cook until softened.
4. Stir in black beans, corn, diced tomatoes and green chilies, taco seasoning mix, and water. Simmer for 5-10 minutes.
5. In a 9x13 inch baking dish, layer half of the tortilla chips, half of the beef mixture, and half of the cheese. Repeat layers.
6. Bake for 20-25 minutes or until cheese is melted and bubbly.
7. Garnish with sour cream, cilantro, and jalapenos, if desired.
