Ingredients (serves 4):
For the blintzes:
- 1 cup all-purpose flour
- 1 cup milk
- 2 eggs
- 1/4 tsp salt
- 1 tbsp vegetable oil
For the filling:
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
For the sauce:
- 1 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- Salt and pepper to taste
Instructions:
1. In a large mixing bowl, whisk together the flour, milk, eggs, salt, and vegetable oil until smooth. Let the batter rest for 10 minutes.
2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 3 minutes. Add the spinach and cook until wilted, about 2 minutes. Remove from heat and stir in the feta cheese. Season with salt and pepper to taste.
3. Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter into the skillet and swirl to coat the bottom of the pan. Cook until the edges start to curl and the bottom is golden brown, about 2 minutes. Flip the blintz and cook for another 30 seconds. Repeat with the remaining batter.
4. Spoon 2-3 tablespoons of the spinach and feta filling onto each blintz and roll up tightly.
5. In a small bowl, whisk together the Greek yogurt, lemon juice, dill, salt, and pepper.
6. Serve the blintzes with the yogurt sauce on top.
