- 1 tbsp. active dry yeast

- 1 1/4 cups warm water
- 1 egg white
- 1 tbsp. water
- Poppy seeds or sesame seeds (optional)

- Use warm water to activate the yeast. If the water is too hot, it will kill the yeast, and if it's too cold, the yeast won't activate.
- Knead the dough for at least 10 minutes to develop the gluten and create a smooth texture.

Cooking Process:

1. In a large mixing bowl, combine the rye flour, bread flour, yeast, sugar, and salt. Mix well.

10. In a small bowl, whisk the egg white and water together. Brush the bagels with the egg wash and sprinkle with poppy seeds or sesame seeds (optional).
11. Bake the bagels for 20-25 minutes until golden brown.
