Mexican Shakshuka

Ingredients (serves 4):

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped

- 1/2 teaspoon chili powder
- 1 can (14.5 ounces) diced tomatoes
