- 1 egg, beaten
- 1 tbsp olive oil


To make the dough, combine the flour, cornmeal, sugar, salt, and yeast in a large mixing bowl. Add the warm water and olive oil, and mix until a dough forms. Knead the dough for 5-10 minutes, until it becomes smooth and elastic. Add the diced jalapeños and knead for an additional minute.
Divide the dough into 6 equal pieces and shape each piece into a ball. Use your finger to poke a hole in the center of each ball, and stretch the hole until it is about 2 inches in diameter. Place the bagels on a baking sheet lined with parchment paper, cover with a clean towel, and let them rise for 30 minutes.
Preheat your oven to 400°F. Bring a large pot of water to a boil, and carefully drop the bagels into the water. Boil for 1-2 minutes on each side, then remove them from the water and place them back on the baking sheet. Brush the beaten egg over the tops of the bagels.
