To start, mix together the flour, salt, black pepper, garlic powder, and paprika in a shallow dish. In another shallow dish, pour the buttermilk. Dip each catfish fillet in the buttermilk, then coat it in the flour mixture. Shake off any excess flour and set aside.
Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the catfish fillets to the skillet. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
