To make this dish, you will need the following ingredients:
- 4 catfish fillets
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 cup buttermilk
- Vegetable oil for frying
- For the tartar sauce:
- 1 cup mayonnaise
- 2 tbsp sweet pickle relish
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
- For the remoulade gravy:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup chicken broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Creole mustard
- 1 tbsp hot sauce
- Salt and pepper to taste
To start, mix together the flour, salt, black pepper, garlic powder, and paprika in a shallow dish. In another shallow dish, pour the buttermilk. Dip each catfish fillet in the buttermilk, then coat it in the flour mixture. Shake off any excess flour and set aside.
Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the catfish fillets to the skillet. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
To make the tartar sauce, mix together the mayonnaise, sweet pickle relish, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Set aside.
To make the remoulade gravy, melt the butter in a small saucepan over medium heat. Add the flour and whisk until smooth. Cook for about 1-2 minutes, or until the mixture turns a light brown color. Slowly whisk in the chicken broth, Worcestershire sauce, Creole mustard, hot sauce, salt, and pepper. Cook for about 5-7 minutes, or until the gravy thickens.
To serve, place a catfish fillet on a plate and spoon some tartar sauce and remoulade gravy over the top. Garnish with chopped parsley or green onions, if desired.
This dish is a perfect combination of crispy and flavorful. The catfish is perfectly fried and the tartar sauce and remoulade gravy add a tangy and spicy kick. This dish is perfect for a family dinner or a weekend get-together with friends.
