- 1/2 cup of heavy cream
- 1/2 cup of granulated sugar
- 1/4 cup of cornstarch
- 2 tablespoons of instant coffee
- 4 large egg yolks
- 2 tablespoons of unsalted butter
For the Coffee Glaze:

- 1 cup of powdered sugar
- 2 tablespoons of brewed coffee
- 1/2 teaspoon of vanilla extract
Cooking Tips:

- Use a pastry bag to pipe the choux pastry onto the baking sheet. This will give your éclairs a uniform shape and size.

Cooking Process:

15. Chill the pastry cream in the refrigerator for at least 1 hour.

17. Transfer the chilled pastry cream to a pastry bag fitted with a small round tip.
18. Pipe the pastry cream into the éclairs through the slit in the bottom.
