Coconut Danish Pastry

Instructions:

2. Add the cold water and mix until the dough comes together. Divide the dough into two equal parts and wrap each in plastic wrap. Chill in the refrigerator for at least 30 minutes.
3. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
4. In a medium mixing bowl, combine the shredded coconut, sugar, melted butter, heavy cream, egg, and vanilla extract. Mix until well combined.
5. Roll out one of the chilled dough balls on a floured surface to about 1/4 inch thickness. Cut the dough into 4-inch squares.
6. Spoon about 2 tablespoons of the coconut filling onto the center of each square. Fold the corners of the square over the filling and pinch the edges together to seal.
7. Place the pastries on the prepared baking sheet and brush with a beaten egg.
8. Bake for 20-25 minutes, or until the pastries are golden brown.
