For the blintzes:

- 1 cup milk

- 1/2 cup cream cheese
- 1/4 cup sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
Instructions:
1. In a large bowl, whisk together the flour and salt. In a separate bowl, whisk together the milk, eggs, and melted butter. Gradually whisk the wet ingredients into the dry ingredients until smooth.
2. Heat a nonstick skillet over medium heat. Add a small amount of butter or oil to the pan and swirl to coat. Pour about 1/4 cup of batter into the pan and swirl to coat the bottom of the pan. Cook until the edges of the blintz start to curl and the bottom is golden brown, about 1-2 minutes. Flip the blintz and cook for another 30 seconds to 1 minute. Repeat with the remaining batter, stacking the blintzes on a plate as you go.
3. In a medium bowl, mix together the ricotta cheese, cream cheese, sugar, egg yolk, and vanilla extract until smooth.
4. To assemble the blintzes, place a spoonful of the cheese filling in the center of each blintz. Fold the sides of the blintz over the filling, then roll up from the bottom to enclose the filling completely.
5. Heat a nonstick skillet over medium heat. Add a small amount of butter or oil to the pan and swirl to coat. Place the blintzes seam-side down in the pan and cook until golden brown on both sides, about 2-3 minutes per side.
6. Serve the blintzes hot, topped with your favorite fruit compote or syrup.
