Chocolate Eclairs Recipe: A Delicious French Pastry

Ingredients (serves 6):

For the choux pastry:

- 1/2 cup water
- 1/2 cup milk
- 1/2 cup unsalted butter
- 1/4 tsp salt
- 1 cup all-purpose flour
- 4 large eggs


For the chocolate custard filling:

- 1 cup whole milk
- 1/2 cup heavy cream
- 4 large egg yolks
- 1/4 cup granulated sugar
- 2 tbsp cornstarch
- 1/4 tsp salt
- 4 oz semisweet chocolate, chopped
- 1 tsp vanilla extract
For the chocolate glaze:

- 4 oz semisweet chocolate, chopped
- 1/2 cup heavy cream
- 1 tbsp unsalted butter
Instructions:

1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
2. In a medium saucepan, combine the water, milk, butter, and salt. Bring to a boil over medium heat.
3. Add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.
4. Remove the pan from the heat and let it cool for a few minutes. Add the eggs one at a time, stirring well after each addition, until the mixture is smooth and glossy.
5. Transfer the choux pastry to a piping bag fitted with a large round tip. Pipe 6-inch logs onto the prepared baking sheet, leaving about 2 inches of space between each one.
6. Bake the eclairs for 25-30 minutes, or until they are golden brown and puffed up. Remove them from the oven and let them cool completely.
7. To make the chocolate custard filling, combine the milk and cream in a medium saucepan and heat over medium heat until it comes to a simmer.
8. In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and salt until smooth.
9. Slowly pour the hot milk mixture into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil.
10. Remove the pan from the heat and stir in the chopped chocolate and vanilla extract until the chocolate is melted and the mixture is smooth.
11. Transfer the custard to a piping bag fitted with a small round tip. Poke a hole in the bottom of each eclair and pipe the custard into the center.
12. To make the chocolate glaze, combine the chopped chocolate, heavy cream, and butter in a small saucepan and heat over low heat until the chocolate is melted and the mixture is smooth.
13. Dip the top of each eclair into the chocolate glaze and let it set for a few minutes before serving.
