- 1 tsp. dried oregano
- 1 tsp. paprika
- 1/2 tsp. cayenne pepper
- Salt and pepper, to taste
- 2 tbsp. olive oil
- Cooked rice, for serving
Instructions:
1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the skillet and set aside.
2. In the same skillet, add the onion, bell pepper, and celery. Cook until the vegetables are tender, about 5 minutes. Add the garlic and cook for an additional minute.
3. Add the diced tomatoes, tomato sauce, Cajun seasoning, thyme, oregano, paprika, cayenne pepper, salt, and pepper. Stir to combine.
