Instructions:
1. In a large bowl, whisk together the flour, milk, eggs, salt, sugar, and melted butter until smooth. Let the batter rest for 10 minutes.
2. In a medium saucepan, combine the diced pears, brown sugar, cardamom, cinnamon, salt, and butter. Cook over medium heat, stirring occasionally, until the pears are soft and the mixture is thick and syrupy, about 10 minutes.
3. Heat a nonstick skillet over medium heat. Pour 1/4 cup of the batter into the skillet and swirl it around to coat the bottom of the pan. Cook until the edges start to curl up and the bottom is golden brown, about 2 minutes. Flip the blintz over and cook for another 30 seconds. Repeat with the remaining batter.
4. To assemble the blintzes, spoon some of the pear filling onto the center of each blintz. Fold the sides over the filling and then roll up the blintz from the bottom. Repeat with the remaining blintzes.
5. In a small bowl, whisk together the sour cream, honey, and cardamom.
6. Serve the blintzes warm, drizzled with the sour cream mixture.
