Yukgaejang

Yukgaejang is a spicy Korean beef soup that is perfect for cold weather. This dish is made with shredded beef, vegetables, and a spicy broth that will warm you up from the inside out.
To make Yukgaejang, you will need the following ingredients per serving: 100g of shredded beef, 1/2 onion, 1/2 carrot, 1/2 zucchini, 1/2 green onion, 1/2 cup of bean sprouts, 1/2 cup of fernbrake, 1/2 cup of water dropwort, 1/2 cup of sliced mushrooms, 1 tablespoon of minced garlic, 1 tablespoon of gochugaru (Korean red pepper flakes), 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and salt and pepper to taste.
To start, soak the fernbrake in cold water for 30 minutes and drain. Cut the vegetables into thin slices and set aside. In a pot, add the shredded beef, minced garlic, gochugaru, soy sauce, and sesame oil. Stir-fry for a few minutes until the beef is browned. Add 4 cups of water and bring to a boil. Skim off any foam that rises to the surface. Add the vegetables and fernbrake and simmer for 20-30 minutes until the vegetables are tender. Season with salt and pepper to taste.
