Vietnamese Chicken Spring Rolls

Ingredients (per serving):
- 2 rice paper wrappers
- 2 oz cooked chicken breast, sliced
- 1/4 cup cooked rice vermicelli noodles

- 1/4 cup shredded cucumber
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup chopped peanuts
- 1 tbsp hoisin sauce
- 1 tbsp peanut sauce
- 1 tbsp lime juice
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 garlic clove, minced
- 1/2 cup warm water
Instructions:
1. In a small bowl, mix together hoisin sauce, peanut sauce, lime juice, fish sauce, sugar, and minced garlic. Set aside.
2. In a large bowl, mix together cooked chicken, rice vermicelli noodles, shredded carrots, shredded cucumber, fresh mint leaves, fresh cilantro leaves, and chopped peanuts.
3. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens.
4. Place the softened rice paper wrapper onto a clean surface. Add a spoonful of the chicken and vegetable mixture onto the center of the wrapper.
5. Fold the bottom of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly to enclose the filling.
6. Repeat with the remaining rice paper wrappers and filling.
7. Serve the spring rolls with the dipping sauce on the side.
