To make the Traditional Chickpea Falafel, start by soaking the chickpeas in water overnight. Drain the chickpeas and add them to a food processor along with the onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and cayenne pepper. Pulse until the mixture is finely chopped but not pureed.
Transfer the mixture to a bowl and add the baking powder and flour. Mix well until the mixture is sticky and holds together.
Heat the oil in a deep frying pan over medium-high heat. Using a small cookie scoop or spoon, form the mixture into small balls and drop them into the hot oil. Fry the falafel until they are golden brown and crispy on the outside, about 3-4 minutes.
Remove the falafel from the oil and place them on a paper towel-lined plate to drain any excess oil.
Serve the Traditional Chickpea Falafel hot with pita bread, hummus, and tzatziki sauce.
This dish is a perfect combination of crispy and soft textures with a savory and slightly spicy taste. It is a great vegetarian option that is packed with protein and flavor. The Traditional Chickpea Falafel is a must-try dish for anyone who loves Middle Eastern cuisine.
