Strawberry Cheesecake Muffins are a delicious and easy-to-make dessert that will satisfy your sweet tooth. These muffins are perfect for any occasion, whether it's a family gathering or a party with friends. The combination of sweet strawberries and creamy cheesecake is simply irresistible.
To make these muffins, you will need the following ingredients:
- 1 and 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup chopped fresh strawberries
- 4 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
To start, preheat your oven to 375°F and line a muffin tin with paper liners. In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the chopped strawberries.
In another bowl, beat the cream cheese and sugar until smooth. Add the egg and beat until well combined.
Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Spoon a dollop of the cream cheese mixture on top of each muffin. Use a toothpick or knife to swirl the cream cheese mixture into the muffin batter.
Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
These Strawberry Cheesecake Muffins are a perfect combination of sweet and creamy. The muffins are light and fluffy, with bursts of juicy strawberries in every bite. The cream cheese swirl adds a tangy and rich flavor that complements the sweetness of the muffins perfectly.
