Spinach and Ricotta Empanadas

Spinach and Ricotta Empanadas are a delicious and easy-to-make dish that is perfect for any occasion. These empanadas are a great way to enjoy the flavors of spinach and ricotta cheese in a crispy, flaky pastry shell.

To make these empanadas, you will need the following ingredients per serving:

- 1/2 cup of fresh spinach leaves, chopped
- 1/4 cup of ricotta cheese
- 1/4 cup of shredded mozzarella cheese
- 1/4 teaspoon of garlic powder
- Salt and pepper to taste
- 1 sheet of puff pastry, thawed
- 1 egg, beaten

To start, preheat your oven to 400°F. In a mixing bowl, combine the chopped spinach, ricotta cheese, shredded mozzarella cheese, garlic powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
Next, roll out the puff pastry sheet on a floured surface. Cut the pastry sheet into 4 equal squares. Spoon the spinach and ricotta mixture onto one half of each square, leaving a small border around the edges. Fold the other half of the pastry over the filling and press the edges together to seal. Use a fork to crimp the edges and create a decorative pattern.
Brush the empanadas with the beaten egg and place them on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the pastry is golden brown and crispy.
These Spinach and Ricotta Empanadas are a perfect appetizer or snack that can be enjoyed hot or cold. The combination of spinach and ricotta cheese creates a creamy and savory filling that is perfectly complemented by the crispy and flaky pastry shell.
