Ingredients:

- 6 cups chopped tomatoes
- 2 cups chopped bell peppers
- 1 cup chopped onion
- 1 cup apple cider vinegar
- 1 cup sugar
- 1 tablespoon salt
- 1 tablespoon mustard seeds
- 1 tablespoon celery seeds
- 1 tablespoon red pepper flakes

Instructions:

1. In a large pot, combine the tomatoes, bell peppers, and onion. Cook over medium heat until the vegetables are soft, about 10 minutes.
2. Add the apple cider vinegar, sugar, salt, mustard seeds, celery seeds, and red pepper flakes to the pot. Stir to combine.
3. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes, stirring occasionally.
4. While the relish is simmering, prepare your canning jars and lids according to the manufacturer's instructions.
5. Once the relish is done cooking, ladle it into the prepared jars, leaving 1/2 inch of headspace at the top. Wipe the rims of the jars clean, then place the lids on top and screw on the bands.
6. Process the jars in a boiling water bath for 15 minutes. Remove the jars from the water and let them cool completely before storing.

The texture is slightly chunky, with a sweet and tangy flavor that is balanced by the heat from the red pepper flakes.
