Southwest Egg Rolls

Instructions:

3. Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly, sealing the edges with a bit of water.
4. Repeat with the remaining egg roll wrappers and filling.
5. Heat the oil in a deep skillet or fryer over medium-high heat. Once the oil is hot, add the egg rolls in batches and fry until golden brown, about 2-3 minutes per side.
6. Remove the egg rolls from the oil and drain on a paper towel-lined plate.
