- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 20 dumpling wrappers
- Water for sealing the dumplings
- Vegetable oil for frying


Instructions:

1. In a food processor, pulse the shrimp until it is finely chopped. Transfer the shrimp to a mixing bowl.
2. Add the chopped chives, shiitake mushrooms, soy sauce, sesame oil, sugar, and salt to the mixing bowl. Mix well.
3. Take a dumpling wrapper and place a tablespoon of the shrimp mixture in the center. Dip your finger in water and moisten the edges of the wrapper. Fold the wrapper in half and press the edges together to seal the dumpling. Repeat until all the dumplings are made.
4. Heat a non-stick pan over medium-high heat. Add a tablespoon of vegetable oil. When the oil is hot, add the dumplings to the pan. Fry the dumplings for 2-3 minutes until the bottoms are golden brown.
5. Add 1/4 cup of water to the pan and cover with a lid. Steam the dumplings for 5-6 minutes until the filling is cooked through.
6. Serve the dumplings hot with soy sauce or your favorite dipping sauce.
