Sesame Ginger Tofu

- 1 block of firm tofu, drained and pressed
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 1 red bell pepper, sliced
- 1 cup snow peas
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame seeds
- Salt and pepper to taste


To start, cut the tofu into small cubes and toss them in cornstarch. Heat up a pan with sesame oil and fry the tofu until crispy and golden brown. Remove the tofu from the pan and set it aside.
In the same pan, add the sliced bell pepper and snow peas and stir-fry for a few minutes until they are tender. Add the grated ginger and minced garlic and stir-fry for another minute.
In a small bowl, mix together the soy sauce, rice vinegar, honey, and sesame seeds. Pour the sauce over the vegetables and stir until everything is coated.
Add the crispy tofu back into the pan and stir everything together. Season with salt and pepper to taste.
