Ingredients (serves 6):
For the Flan:
- 1 cup heavy cream
- 1 cup whole milk

- 1/2 cup granulated sugar
- 1/4 cup water

Instructions:
1. Preheat the oven to 325°F (160°C).
2. In a medium saucepan, combine the heavy cream, whole milk, sugar, rose water, and salt. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.
3. In a large bowl, whisk together the eggs and egg yolks. Slowly pour the hot milk mixture into the eggs, whisking constantly.
4. Strain the custard mixture through a fine-mesh sieve into a large measuring cup or bowl with a spout.
5. In a small saucepan, combine the sugar and water for the caramel. Cook over medium heat, stirring occasionally, until the sugar has dissolved. Increase the heat to high and cook, without stirring, until the mixture turns a deep amber color, about 5-7 minutes.
6. Pour the hot caramel into six 6-ounce ramekins, swirling to coat the bottom and sides of each ramekin.
7. Divide the custard mixture evenly among the ramekins.
8. Place the ramekins in a large baking dish and fill the dish with enough hot water to come halfway up the sides of the ramekins.
9. Bake for 35-40 minutes, or until the custards are set but still slightly jiggly in the center.
10. Remove the ramekins from the water bath and let cool to room temperature.
11. Cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or overnight.
12. To serve, run a knife around the edge of each ramekin and invert onto a plate. Serve chilled.
