Instructions:

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
2. Arrange the sliced eggplant, zucchini, red and yellow bell peppers, and onion on the baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 20-25 minutes, or until the vegetables are tender and lightly browned.
