Roasted Red Pepper Relish Canning

Ingredients:

- 6 red bell peppers
- 1 large onion, chopped

Instructions:

1. Preheat your oven to 400°F. Cut the red bell peppers in half and remove the seeds and stems. Place them on a baking sheet, cut side down, and roast for 20-25 minutes, or until the skins are charred and blistered.
2. Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let them cool for 10-15 minutes.
3. Once the peppers are cool enough to handle, remove the skins and chop them into small pieces.
4. In a large pot, combine the chopped peppers, chopped onion, apple cider vinegar, sugar, salt, and black pepper. Bring the mixture to a boil over medium-high heat.
5. Reduce the heat to low and simmer the relish for 30-40 minutes, stirring occasionally, until it has thickened and the onions are translucent.
6. While the relish is simmering, prepare your canning jars and lids according to the manufacturer's instructions.
7. Once the relish is ready, ladle it into the prepared jars, leaving 1/4 inch of headspace. Wipe the rims of the jars with a clean, damp cloth, and place the lids on top.
8. Process the jars in a boiling water bath for 15 minutes. Remove the jars from the water and let them cool on a wire rack.
9. Once the jars are cool, check the seals and store them in a cool, dark place for up to 6 months.
