Roasted Garlic Tomato Sauce Canning

Ingredients:

- 10 pounds of fresh tomatoes
- 2 heads of garlic

Instructions:

1. Preheat your oven to 400°F.
2. Cut the tops off of the garlic heads and drizzle with olive oil. Wrap them in foil and place them in the oven to roast for 30-40 minutes.
3. While the garlic is roasting, wash and chop the tomatoes into small pieces.
4. In a large pot, heat the olive oil over medium heat. Add the chopped tomatoes, salt, black pepper, oregano, basil, and red pepper flakes. Stir to combine.
5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, stirring occasionally.

10. Once the sauce is done simmering, ladle it into the prepared jars, leaving 1/2 inch of headspace. Wipe the rims of the jars with a clean, damp cloth, then place the lids on top and screw on the bands.
11. Process the jars in a boiling water bath for 35 minutes.
12. Once the jars are done processing, remove them from the water bath and let them cool on a towel-lined countertop. Once they're cool, check the seals and store the jars in a cool, dark place.
