- 1 egg yolk
- 1-2 tablespoons ice water

For the filling:

- 8 oz white chocolate, chopped
- 1/2 cup heavy cream
- 2 egg yolks
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
For the topping:

- 2 cups fresh raspberries
- 1/4 cup raspberry jam
- 1 tablespoon water
Instructions:

1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, combine the flour, sugar, and butter. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
3. Add the egg yolk and 1 tablespoon of ice water to the mixture. Mix until the dough comes together. If the dough is too dry, add another tablespoon of ice water.
4. Roll out the dough on a floured surface and transfer it to a 9-inch tart pan. Press the dough into the bottom and sides of the pan. Trim the excess dough from the edges.
5. Bake the crust for 15-20 minutes, or until it's lightly golden brown. Remove from the oven and let it cool.
6. In a medium saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove from the heat and add the white chocolate. Stir until the chocolate is melted and smooth.
7. In a separate mixing bowl, whisk together the egg yolks and sugar until light and fluffy. Add the butter and vanilla extract and mix until well combined.
8. Slowly pour the white chocolate mixture into the egg mixture, whisking constantly.
9. Pour the filling into the cooled crust and smooth it out with a spatula. Chill the tart in the refrigerator for at least 2 hours, or until the filling is set.
10. In a small saucepan, heat the raspberry jam and water over low heat until the jam is melted and smooth.
11. Arrange the fresh raspberries on top of the tart and brush them with the melted raspberry jam.
12. Serve the Raspberry White Chocolate Tart chilled and enjoy!
