To make these Raspberry Linzer Cookies, you will need the following ingredients:

- 2 cups all-purpose flour
- 1 cup ground almonds
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup raspberry jam
- Powdered sugar, for dusting

This recipe makes about 24 cookies.
To start, preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour and ground almonds.
In a separate large bowl, cream together the butter and sugar until light and fluffy. Add in the egg and vanilla extract and mix until well combined. Gradually add in the flour mixture and salt, mixing until a dough forms.
Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
Once chilled, roll out one disk of dough on a lightly floured surface to about 1/4 inch thickness. Use a cookie cutter to cut out circles and place them on the prepared baking sheet. Use a smaller cookie cutter to cut out the centers of half of the circles.
Bake the cookies for 10-12 minutes, or until lightly golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
To assemble the cookies, spread a small amount of raspberry jam on the whole cookies. Top with the cut-out cookies and dust with powdered sugar.
These Raspberry Linzer Cookies are perfect for any occasion and are sure to impress your guests. They are a great addition to any holiday cookie platter or as a sweet treat with your afternoon tea.
