- 1 tsp vanilla extract
- 1/2 cup raspberry jam


Instructions:

1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
2. Add the chilled butter to the bowl and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
3. In a separate bowl, whisk together the egg and vanilla extract. Add the egg mixture to the flour mixture and stir until a dough forms.
4. Divide the dough into two equal portions and shape each portion into a disk. Wrap the disks in plastic wrap and refrigerate for at least 30 minutes.
5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
6. On a lightly floured surface, roll out one of the dough disks to a thickness of about 1/8 inch. Use a round cookie cutter or the rim of a glass to cut out circles of dough.
7. Place a small spoonful of raspberry jam in the center of each dough circle. Fold the edges of the circle up and over the jam, pinching the corners together to form a triangle.
8. Place the filled cookies on the prepared baking sheet and bake for 15-18 minutes, or until the edges are lightly golden.
9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
