- 1/4 cup sliced avocado
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon sesame oil

Cooking Tips:

- Make sure to have all your ingredients prepped and ready to go before you start assembling the rolls.
- Soak the rice paper wrappers in warm water for about 10 seconds before using them. They should be pliable but not too soft.
- Don't overfill the rolls or they will be difficult to roll up.
Instructions:

1. In a small bowl, whisk together the soy sauce, rice vinegar, honey, and sesame oil. Set aside.
2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water and let it soak for about 10 seconds.
3. Place the soaked wrapper on a clean work surface. Arrange a small amount of quinoa, carrots, cucumber, red bell pepper, avocado, cilantro, and mint in the center of the wrapper.
4. Fold the bottom of the wrapper up over the filling, then fold in the sides. Roll the wrapper up tightly to enclose the filling.
5. Repeat with the remaining ingredients.
6. Serve the spring rolls with the dipping sauce on the side.
