For the Flan:

- 1 cup granulated sugar
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 4 large eggs
- 1 cup pumpkin puree
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- Pinch of salt


For the Caramel:

- 1/2 cup granulated sugar
- 1/4 cup water
Instructions:

1. Preheat your oven to 350°F.
2. In a small saucepan, combine the sugar and water for the caramel. Cook over medium heat, stirring occasionally, until the sugar has dissolved. Increase the heat to high and cook, without stirring, until the mixture turns a deep amber color, about 5-7 minutes. Pour the caramel into a 9-inch round cake pan, tilting the pan to coat the bottom evenly. Set aside.
3. In a large bowl, whisk together the sweetened condensed milk, evaporated milk, eggs, pumpkin puree, vanilla extract, cinnamon, ginger, nutmeg, and salt until well combined.
4. Pour the mixture into the prepared cake pan. Place the cake pan in a larger baking dish and fill the larger dish with hot water until it reaches halfway up the sides of the cake pan.
5. Bake for 50-60 minutes, or until the flan is set but still jiggles slightly in the center.
6. Remove the cake pan from the water bath and let cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight.
7. To serve, run a knife around the edge of the cake pan to loosen the flan. Invert the flan onto a serving platter, allowing the caramel to drizzle over the top.
