To make the blintzes, start by making the batter. In a large bowl, whisk together the flour, salt, and sugar. In a separate bowl, whisk together the milk, eggs, and melted butter. Gradually pour the wet ingredients into the dry ingredients, whisking until smooth. Let the batter rest for 10 minutes.
While the batter is resting, make the pumpkin spice filling. In a medium bowl, mix together the pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract.
To cook the blintzes, heat a non-stick skillet over medium heat. Grease the skillet with a little bit of butter. Pour 1/4 cup of the batter into the skillet and swirl it around to coat the bottom of the skillet. Cook for 1-2 minutes, until the edges start to lift up. Flip the blintz and cook for another 30 seconds. Repeat with the remaining batter.
To assemble the blintzes, spoon 2 tablespoons of the pumpkin spice filling onto the center of each blintz. Fold the sides of the blintz over the filling and then fold the bottom up and the top down to create a little package.
