Instructions:

1. Preheat your oven to 350°F (175°C).
2. In a bowl, mix together the chopped pistachios and sugar.
3. Brush a 9x13 inch baking dish with melted butter.
4. Lay a sheet of phyllo dough in the baking dish and brush it with melted butter. Repeat this process until you have used half of the phyllo dough.
5. Sprinkle half of the pistachio and sugar mixture over the phyllo dough.
6. Layer the remaining phyllo dough on top of the pistachio mixture, brushing each sheet with melted butter.
7. Sprinkle the remaining pistachio and sugar mixture over the top layer of phyllo dough.
8. Use a sharp knife to cut the baklava into pieces.
9. Bake the baklava for 30-35 minutes, or until it is golden brown.
10. While the baklava is baking, make the syrup. In a saucepan, combine the water, sugar, lemon juice, and vanilla extract. Bring the mixture to a boil and then reduce the heat to low. Let the syrup simmer for 10-15 minutes, or until it has thickened.
11. Once the baklava is done baking, remove it from the oven and pour the syrup over it.
12. Let the baklava cool completely before serving.
