Ingredients:
- 2 lbs of fresh jalapeno peppers
- 2 cups of white vinegar
- 2 cups of water

- 1 tsp of coriander seeds
Instructions:
1. Begin by washing and slicing the jalapeno peppers into thin rings. Remove the seeds and stems if desired.
2. In a large pot, combine the white vinegar, water, salt, sugar, garlic, black peppercorns, and coriander seeds. Bring the mixture to a boil, stirring occasionally.
3. Once the mixture has come to a boil, add the jalapeno pepper rings to the pot. Reduce the heat to low and let the peppers simmer for 10-15 minutes.
4. While the peppers are simmering, prepare your jars for canning. Sterilize the jars and lids by boiling them in a large pot of water for 10 minutes.
5. Once the peppers have finished simmering, use a slotted spoon to transfer them to the sterilized jars. Fill the jars with the pickling liquid, leaving about 1/2 inch of headspace at the top.
6. Wipe the rims of the jars with a clean cloth and seal them with the lids. Process the jars in a boiling water bath for 10 minutes.
7. After processing, remove the jars from the water bath and let them cool on a towel. Once cooled, check the seals and store the jars in a cool, dark place for up to a year.
