Pickled Garlic Scapes Preserves

Ingredients:

- 1 pound garlic scapes
- 2 cups white vinegar

Instructions:

1. Wash the garlic scapes and trim off the ends. Cut them into 4-inch pieces and pack them tightly into sterilized jars.
2. In a saucepan, combine the vinegar, water, sugar, salt, peppercorns, mustard seeds, and coriander seeds. Bring the mixture to a boil, stirring until the sugar and salt dissolve.
3. Pour the hot liquid over the garlic scapes, leaving 1/2 inch of headspace. Use a chopstick or skewer to remove any air bubbles.
4. Wipe the rims of the jars with a clean, damp cloth and seal with sterilized lids and rings.
5. Process the jars in a boiling water bath for 10 minutes. Remove the jars from the water and let them cool on a towel.
6. Store the jars in a cool, dark place for at least 2 weeks before opening. Once opened, store the jars in the refrigerator.
