Instructions:

1. In a large bowl, combine the chicken, red bell pepper, green onion, cilantro, queso fresco, aji amarillo paste, soy sauce, lime juice, cumin, garlic powder, salt, and black pepper. Mix well.
2. Lay an egg roll wrapper on a flat surface with one corner facing you. Spoon 2 tablespoons of the filling onto the center of the wrapper.
3. Fold the bottom corner of the wrapper over the filling, tucking it under the filling. Fold the sides of the wrapper over the filling, then roll the wrapper tightly to the top corner. Use a dab of water to seal the top corner.
4. Repeat with the remaining egg roll wrappers and filling.
5. Heat oil in a deep fryer or a large pot over medium-high heat. Fry the egg rolls in batches until golden brown, about 3-4 minutes per batch.
6. Drain the egg rolls on paper towels and serve hot with your favorite dipping sauce.
