Peking Duck

Peking Duck is a classic Chinese dish that is known for its crispy skin and succulent meat. To make this dish, you will need a whole duck, which is seasoned with a blend of spices and then roasted until it is golden brown and crispy.

Ingredients:

- 1 whole duck
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 1 tablespoon of five-spice powder
- 1 tablespoon of soy sauce
- 1 tablespoon of rice wine
- 1 tablespoon of honey
- 1 tablespoon of vinegar
- 1 tablespoon of cornstarch
- 1 tablespoon of water
- 1 bunch of scallions
- 1 cucumber
- Hoisin sauce
- Pancakes


To start, clean the duck and remove any excess fat. Then, mix together the salt, sugar, five-spice powder, soy sauce, rice wine, honey, and vinegar to create a marinade. Rub the marinade all over the duck, making sure to get it into the cavity as well. Let the duck marinate for at least 2 hours, or overnight if possible.
Preheat your oven to 375°F. Place the duck on a roasting rack and roast for 1 hour and 30 minutes, or until the skin is crispy and golden brown. While the duck is roasting, mix together the cornstarch and water to create a slurry. Brush the slurry onto the duck every 20 minutes during the last hour of cooking to create an extra crispy skin.
Once the duck is done, remove it from the oven and let it rest for 10 minutes. While the duck is resting, prepare the scallions and cucumber by cutting them into thin strips. Warm up the pancakes according to the package instructions.
To serve, spread some hoisin sauce onto a pancake, add a few strips of scallions and cucumber, and then add a few pieces of the Peking Duck. Roll up the pancake and enjoy!
