Instructions:
1. Preheat your oven to 300°F and line a baking sheet with parchment paper.
2. In a medium bowl, sift together the almond flour and powdered sugar. Set aside.
3. In a large bowl, beat the egg whites until they are frothy. Gradually add the granulated sugar and continue to beat until stiff peaks form.
4. Add the orange blossom water and food coloring (if using) to the egg white mixture and gently fold in the almond flour mixture until fully combined.
5. Transfer the mixture to a piping bag fitted with a round tip and pipe 1-inch circles onto the prepared baking sheet.
6. Tap the baking sheet on a flat surface to release any air bubbles and let the macarons sit at room temperature for 30 minutes to form a skin.
7. Bake the macarons for 15-18 minutes, or until they are set and slightly golden.
8. While the macarons are baking, prepare the orange blossom buttercream. In a large bowl, beat the butter until creamy. Gradually add the powdered sugar and beat until smooth. Add the orange blossom water and heavy cream and beat until light and fluffy.
9. Once the macarons are done baking, let them cool completely on the baking sheet before removing them.
10. To assemble the macarons, pair up the shells by size and spread a generous amount of buttercream on one half. Top with the other half and gently press down.
11. Serve the Orange Blossom Macarons immediately or store them in an airtight container in the refrigerator for up to 3 days.
